Update.
Last week, at the restaurant I work in, the kitchen happened to be short staffed one day… and by short staffed I mean one cook for a lunch rush during which we had a couple of parties coming in. The owner, having no one else to put into the kitchen, decided to throw me in to help with prep work and to work a little bit of the line during the lunch rush. Now, for those of you who do not know, I was hired on as a server with the intentions of possibly being moved into the kitchen in mid June, when they would be losing one of their cooks. Well, I must have made a bit of an impression, because that day, they told me to go get a new chefs coat as they would be listing me as a cook very soon. And they meant soon. Like, I start on Tuesday soon. I am so freaking excited and happy! :) I’ve been wanting so badly to gain some professional cooking experience and I have finally earned myself the opportunity to do so!
Along with my excitement, I’m a little nervous. I have a lot to prove, both to myself and to the cooks with whom I will be working. I’m just hoping and praying that my best will be good enough. -fingers crossed- I look at this as the start of all of my goals, hopes, and dreams coming true. The work that I put into the training the Looking Glass will provide will help to shape my ultimate goal of my sustainable, organic, restaurant that I intend to open and run one day. <(0_0’<)
